For me, I like a sampler plate - the "El Presidente" at CuCo's, The sampler plate at Don Jose, etc.

Fajitas and chicken mole enchiladas (few do this well Manny’s uptown in Dallas being my favorite)

Cheese enchiladas w/ ranchero sauce. Many places make their ranchero too sweet, it should have a slight tomato taste w/ good spicy heat, smokiness elevates ranchero to another level.

I know it gets a lot of hate but fajitas at Papasitios is mine.
If I lived around one I would eat them at least weekly.
Normal go to at most palaces us some sort of combo to get a variety or Sour cream chicken enchiladas.

I like a combo plate with enchiladas and a taco or tamale with beans and rice.

I like the steak, shrimp and chicken cheese dip. Different name at every place. Usually comes with guac, sour cream, pico and tortillas for under $12-15. Can make 3-4 tacos easily.

I really enjoy the Trio fajitas at Superior and Blue Corn. Blue Corn is a must-try for anyone wanting something different than Superior.

Tie between Chille Rellanos or Ceviche

I also like a sampler plate, or fajitas with all the good stuff (shrimp, chicken, steak, and chorizo).
Either way, it makes for a good meal, and another good leftover meal in the next couple of days.
