One of the ways to lower the heat or salt in a recipe is to add potatoes to absorb some of the offending characteristic. I've never added potatoes to chili, although I have served chili over a baked potato. Topped with cheese, green onions or diced onions. Very quick and tasty meal, and a way to finish up chili when you don't have enough leftovers for another meal and don't have or want hotdogs.

I've never added potatoes but I do like to add some pasta to a bowl of chili for a solid meal of chili mac

Chili and cheese over french fries is great.

Someone below suggested cornbread waffles and we do that. It is good that way also.

Same with baked potato suggestion and elbow Mac suggestion.

When I was a kid, we ate a lot of Hormel chili (It was better back then.) My older brother liked to add sliced onions and potatoes. It was OK for what it was, but it didn't make me want to start putting potatoes in my chili.

No potatoes but I do add a handful of fresh mushrooms from time to time. They soak up all the flavors and are really delicious.

I might be crazy, but I’m not a fan of potatoes. They add nothing in most meals

Every once in a while I make chili Colorado. Sometimes I pop a potato in it to stretch it. It works well.

Just be aware, that if you simmer the chili for an extended time, or put it in a crock pot, the potatoes will break down and act like a sauce thickener and turn your chili into more of a porridge consistency. Not bad, but different.

I've never put potatoes in my chili, but I routinely serve it with a side of wedge fries and cheese sauce. Fill half a big bowl with the fries and half with the chili and some onions, cilantro, etc. Pour cheese sauce down the middle.

Or you could just add chili powder to your beef stew.
