Starting to get serious about my diet and would like any creative low carb meal recipes. I can only eat grilled chicken and veggies so many times

Get good at grilling & smoking different meats. Then rotate your veggies. Green Beans, Broccoli, Cauliflower, Cabbage, Bok Choy, Turnips, etc. Don't forget Salmon & Tuna

I mix in hot sauces to spice things up. Pretty much all of them are low carb.
Also a lot of smoking and grilling.
Salads all the time with leftover smoked meat, cheese, some low carb dressings.

Pork chops and cabbage
Steak and salad
Shrimp and broccoli stir fry
Egg roll in a bowl
Bbq shrimp
Basically any meat and then above ground veggies. I did hardcore keto for 9 months 3 years ago and lost 70 lbs. went from 240 to 170. When I did that I basically ate 2 eggs however I wanted in the morning and 2-4 pieces of bacon. Lettuce wrap for lunch with deli meat and for dinner it was a rotation of steak/chicken/salmon/tuna and cauli, broccoli, asparagus, Brussels, salad, or squash and zucchini.
I maintained for those three years until I started drinking beer a lot more. Got up to 190. I’ve been doing “dirty keto” for the last 2 months and have dropped 10 already. I eat the Lewis keto bread and la banderita keto street tacos. It helps a lot eating those. Can have sandwiches and tacos. Also make “Philly cheesesteaks” with the tacos often. Fajitas too. Those definitely help alot. Lewis bread also has hamburger and hotdog buns so I can make burgers and hotdogs as well. Usually have my hotdogs with spicy mustard and kraut. G. Hughes has 30+ sauces that are sugar free as well that add lots of flavor to dishes. All of that is “dirty keto” though.
Eta: youtube is great for keto ideas. Lots of good stuff out there.

Buffalo wings with celery and blue cheese/ranch is a good low carb meal.

I mean really just eat what you like but just cut back on the carbs.

Thanks! I think I can handle eating this way. The hardest part is going to be staying away from beer

Bone-in, skin on chicken thighs paired with sweet potato (relatively low card actually) and maybe some asparagus. Salt, pepper, and smoked paprika on the chicken thighs and bake until crispy. This is a top-5 meal for me.

If you're good with Miller Lite, it's only 2.6 carbs per beer. Yeah, not the best, but it's an extremely low carb beer.

There are 30 carbs in a cup of sweet potatoes. They are not low carb at all

Blackened fish (firm meat fish is best)
Hamburger steak
Steak (stock the freezer if you find a good price)
Leave out the rice or substitute cauliflower rice for everything normally served with it.
Gumbo, red beans, stir fry, curry
Frozen Green beans can be prepared many different ways
Burrito bowls/salad (works well with leftovers); or use low carb tortillas.
Bacon and eggs
Chicken shawarma; (avoid gyro as it is sometimes carb heavy due to the binder used).

A gallon of gumbo is made with ~1 cup of flour (95g carbs) in the roux.
So you're looking at 6g of carbs per cup of gumbo (from flour). Factor in the onion and bell pepper, you're probably still around 7-8g per cup of gravy. Serve with cauliflower rice and it's low carb.
Red beans aren't that bad for a dirty keto diet due to the protein and fiber content. Red beans are very filling and have good digestive properties consisting of complex carbohydrates vs simple (sugar). A cup of Blue Runner has 36g of net carbs and 12g fiber. Obviously can't have rice, so omit or use cauliflower rice.
For a true keto diet, then yes, avoid beans.
eta: For comparison, cashews, a popular "low carb" snack, also contain 36g net carbs per cup. But only 4-5g fiber and 8g sugar.

Anything on the low carb wraps.. they are my best friend.

I do an 8 egg omelet which becomes 4 meals, 3 go it the fridge. Blue cheese, mushroom, asparagus, a little onion (just one idea). Bacon on the side.
Turkey burgers, usually topped with blue cheese and mushroom (maybe bacon too). If you want to go with ketchup to top then Heinz makes a sugar free that I like better than their regular ketchup.
Tuna steaks and asparagus often. Boiled shrimp too.
Chicken breast grilled and then topped with some Rao's Marinara (low carb for tomato sauce), swiss, and parmigiana. Microwave to melt the swiss.
Lots of spinach salads - usually with chicken, a boiled egg, bacon, blue cheese dressing.
I layer lunch meat and swiss cheese, microwave, and make a rollup for a snack.
For something sweet - Ricotta cheese (can't be a LOT), fake sugar, chopped almonds, almond extract. Stir and eat.
Macadamia nuts. Smucker's natural peanut butter isn't too bad on carbs.
Old English cheese spread (no carbs) to help with the veggies (usually on broccoli or cauliflower).

Also a fan of low carb wraps - my go-to is a chicken quesadilla w/ cheese and breakfast quesadilla with eggs, turkey bacon, cheese, and veggies (onion, mushroom, tomato, spinach).

When I first did keto I made a bunch of diff stuff from the caveman Keto site.
I know it’s warming up, at least down here, but I would do the caveman chili in a crockpot and eat that for a few days. Always good.
