It's a level of stupidity I can't wrap my head around. Keeping condiments, hot sauce, Worscheshire, whatever, under refrigeration vastly extends their shelf life, and keeps them at a higher quality for a much longer period vs being unrefrigerated. These are facts. It's the very reason refrigerators we're invented. The only reasons not to keep them refrigerated would be you don't have a refrigerator, or you prefer shitty, improperly cared for condiments.

The stuff I don't keep in the fridge doesn't need a long shelf life because I use it very quickly anyway. And most everything I don't fridge is vinegar based.

I do fridge sauces that say on the label to fridge them. Just not hot sauce, Lea and Perrins, ketchup, mustard, or buffalo sauce. My fridge door is already full of salad dressings and sauces, so I don't even know where I'd put those, tbh.

Some years ago, we ate at Emeril's Delmonico. They sold his homemade worcestershire sauce. it was outstanding in flavor. A bit different from L & P, but so good. Otherwise, it's L & P.

I don't refrigerate L & P and I have never noticed a decline in quality.
