I did grow up around horses and that is not how I was taught.
If you have to come up behind a horse, you come close enough to make sure it can’t wind up.

The stuntmen who could do that kind of stuff for old Hollywood westerns were real old timey cowboys. It's not something you just decide to try.

Thats funny. We have had horses we could do that with in a quick mount - basically leap frog into the saddle. The key is they need to know you are coming. He startled his horse and paid the price.
