Round trip flight prices

Looking to fly round trip in May from Nola to Paris then from Paris to Greece back home. What kind of price should I be targeting to get the round trip at?

Jet fuel prices have started coming down but are still very high, same as auto gas prices. It looks like prices will continue to drop as the world economy slows, so I would wait and see what happens. You don't need to pull the trigger until January or February.

Look at finding cheap options for each leg of the trip. Booking with ultra low cost carriers on individual legs is much cheaper than buying a direct route through a single airline. Start by finding the cheapest flight to NYC, preferably to Newark. Frontier, JetBlue, Spirit, Southwest and United all have direct flights to NYC from New Orleans. You can use the metro to transfer airports if needed. Then fly from Newark to Paris-Orly on an airline called French Bee. They have flights for only $227 one way. Then from Paris, find a European low cost carrier like Ryanair, Vueling, Wizz Air, or easyJet that can get you to Greece for $40.

Breaking the trip into separate tickets for each leg will be a nightmare with baggage and international arrival/departure.
Set a flight tracker on Google flights, Kayak, and the Hopper app. Might want to do an open jaw option- MSY-CDG then ATH-MSY

We’ve been a few times due to my previous role having an office in Southampton.
We took the BA direct from MSY and would spend a day or so in London before taking the Eurostar. Very neat experience. You pay a few hundred more but worth it to have a direct flight and use msy customs on return.

Not at all. Bags typically get lost during transfers and connections. If you’re having to check your bag on each leg, it’s guaranteed to go on a direct flight, decreasing the chance of them getting lost. Especially worth it when your getting a $500 fare difference.

Yeah might have to do that fly into London spend a day or two there and just train over Paris.

If you are spending time in both Paris and in Greece, then you'll very likely do better with separate tickets for each leg.

In the past you could find fare deals to Paris in the 400-500 range and then flights from paris to Greece in the 100 dollar range.
But prices are kinda fricked right now and I haven't seen many Europe fare deals pop up.
As of right now I'd expect to spend 1000-1300

May is way out in advance as far as pricing is concerned so the $1000-$1500 estimates are probably pretty accurate. Not to say you won't find a deal for $500 or $600 but you'll likely have to wait until the winter or early spring before you see it.
For roundtrip pricing, I've been booking a lot of one way tickets but they've all been domestic. International tends not to have as good deals one-way as compared to booking round-trips or multicity.
Whoever suggested fly to NYC, transfer airports or airlines, then fly to Europe and transfer airlines is asking for trouble especially international. You'd at least want to give yourself 4 hrs in between so you can collect bags then have them retagged. I just did this at JFK on Thursday for two separate domestic flights where the delta agent was unable to check bags all the way from sea-jfk-buf (she only checked to JFK then I had to grab and retag the bags under the second reservation). I got lucky my flights were on time but for international no way id want to worry about getting bags and reclearing security.
So in essence, wait for prices to go down and book everything on one airline. Saving $100 on multiple tickets could cause a lot more issues than it's worth

I say most likely around $1,500 if you want to avoid all of the headaches
