What are the best restaraunts in Paris?
Looking for traditional French menu.

Budget?
To get you started on the high end:
Guy Savoy
Epicure
Pierre Gagnaire
Prepare for 200-300 euro each before drinks for the Michelin star spots.

I would like to keep it under 1 - 1.2k per meal, but budget is not a huge concern. I am willing to pay for experience and result, but also not looking to drop 10k on a meal for 2

Two of my suggestions are Polidor and another was Cafe Constant but it closed back in Nov '21 and the chef reopened under a different name in the same location and calls it Cafe Lignac.

That's a pretty loaded question considering the quality of high end restaurants in Paris. But generally speaking:
Pierre Gagnaire
Epicure
Arpege
Guy Savoy
L'Ambroisie
David Toutaine
For me the value is in places like Septime and Frenchie. Places that are more casual and have a Michelin Star but are substantially more affordable and less stuffy.

A $10,000 meal for 2 people would be impressive. That would have to include several $2k bottles of wine

There was a post on the F&D board last week asking for the best meal you ever had in your life. My answer was that #1 and #2 were both at Guy Savoy in Paris.
That said, it is not traditional French food. There is plenty of that to be found. What part of town do you want to be in?

My thing about paris is they have some many world class restaurants that you don't have to spend 1000k bucks at.
There are some many casual offshoots of famous chef's places, or up and coming places that you really don't need to eat Guy Savoy to have an amazing meal.
But if you have the means, sure, its wonderful.

The part of town really does not matter to me too much. Much of the short part of the trip to Paris would be to experience the culinary aspect. Happy to go where needed.

Le Grand Vefour
This historic place in the Palace Royal is one of the most beautiful restaurants I have been to. We sat at Napoleon and Josephine's table which is a padded bench built in to the front wall. It can be very expensive at night but they have lunch specials.
Guy Savoy also has lunch specials although they seem to try to hide it.
Another one is Le Cinq in the George V Hotel.
I love the traditional gourmet Parisian bistros. Here are a few of my favorites:
Chez Georges on rue du Mail.
Josephine Chez Dumonnet
Hebe
Chez Monsieur
Frenchie
Boutary if you are in to caviar
Casual places-
Juvenile's
Freddy's Wine Bar
Chez L'Ami Jean

I will second Ciel de Paris or at least say you should check it out. It's been a few years but the wife and I had a great meal there. I can't vouch for current quality or pricing but if we were going to be in Paris I would check it out.

Also, Le Chateaubriand refuses to allow Michelin to rate them, and they have an amazing tasting menu at, for that level, a very low price.

Not surprising for Septime I guess, that is an incredibly hard reservation to get.
