‘Fryer” are less than two months old when they are slaughtered….any older and we would be complaining about them being too tough. They don’t have time to grow much in that amount of time…

I've raised those large Cornish-Roc cross breeds. No need for steroids, in 8-10 weeks those things are 7-9 pounds. It is simple genetics in that case. A cross between a Cornish and a White Roc produces those chickens.

Well they definitely are more expensive.

For a while, wings were noticeably larger. Why? Because during covid, processors shite down and couldn’t kill as many chickens. The chickens grew larger than they normally would. That trend is pretty much over now.

Chicken wings come in 2 sizes from meat suppliers: small and large. Your restaurant must have bought the small ones.

Perhaps because they are charged by the weight and you pay the restaurant by the wing. So if wings weigh less, and you’re paying more, they can make more money.

But…I seriously doubt that to be the reason for most places. It’s probably as simple as they bought the small wings for any number of reasons.

I like the smaller wings, just ordered a platter down here in tuscon dam drumsticks were the size of chicken legs.
