You sir, are incorrect! Billy’s has the best boudin in South Louisiana, hands down! The meat to rice ratio, the texture, the spices, etc., everything blends together so well. And the boudin balls…the outside is like fried chicken skin and the insides are just pure goodness.

I don’t get cracklins often, but am never disappointed when I do get them.

I know the lines at Billy’s can be long, but it’s worth the wait. Also, don’t you think there’s a reason why there are usually long lines at Billy’s? Because they’re the best.

I mean, the location hasn’t hurt their reputation either. They are accessible and good.


But the best boudin I’ve had has come from some back road places

I agree that’s part of the problem. The other part is they take forever to serve and ring up.

But I don’t care.

I haven’t had much south la boudin, but the best I’ve had is boudin noir from Bourgeois.

I’m not sure why more people don’t make boudin noir, it tastes so much better.

Maybe to your palate and that is all you know. But, it is really just mediocre boudin overloaded with MSG and not much liver. Boudin without liver is not boudin. You do know MSG is a flavor enhancer and it is hides other flavors. Where is the parsley, onion tops in Billy’s? You get the MSG pop, but no other flavors to me. The store in Opelousas is absolutely filthy and gross. Word is that Billy does not even eat boudin!
If that is all you know, then go for it. You should try sampling other boudins. A good boudin will hold its flavors at room temperature.
As far as cheese in boudin, no thank you. They don’t belong together. Now, a good cheese on cracker, yes.
Like others on here, there is much better boudin than Billy’s.

Maybe to someone born in Michigan or New York City I found it more bland than any other boudin
