What is the big deal about coaching the frickin Egg Bowl this year?
If he is not going to coach the playoffs he might as well get it over with now. Ole Miss should be able to beat State easily this year regardless of who is coaching them.

He’s gone, but they want to let him finish out the regular season.
That definitely seems like the most likely answer, but I can think of a couple of other scenarios that are at least possible:
1. Kiffin actually hasn’t made a decision yet (or at least hasn’t told anyone) and he told all parties he’d give them a decision after the Egg Bowl. This still makes you think he’s leaning towards leaving since signing the extension would certainly make it less of a distraction. But doesn’t mean he’s 100% gone.
2. Kiffin had some sort of counter/ultimatum for Ole Miss they weren’t prepared to agree on, and they asked him to give them until the Egg Bowl to buy some time to work the boosters.
Again I think the most likely conclusion is that he’s gone and they want him to finish the regular season. Just throwing out some possible alternatives, however low the likelihood may be.

Just skimming Kiffin’s 2020 contract, it appears to only be a violation if he fails to notify Ole Miss. The consequence of failing to notify them that he’s accepted employment elsewhere is.. termination.
My understanding is that he now has a contract with the Ole Miss Foundation, and the full contract isn’t publicly available. So maybe there are more stringent terms in that one.
Regardless - if we are operating under the assumption that A) he told them he’s leaving and B) both parties (Ole Miss and Lane) want him to stay through the Egg Bowl, I don’t think it’s crazy to suggest that he could sign a term sheet or something in the interim. We are talking about a situation where Ole Miss chooses to keep him there until the end of the regular season.
