One question, does Stannis know Mance is in Winterfell? He was sent to save the "Arya" from Mel's vision, but it turned out to be Alys Karstark...and she turned up without Mance. Mance had another plan for going south, but did Stannis know of it? Was Winterfell even taken by then? I need a damn timeline.
I suppose another theory could be that Stannis takes Winterfell with Mance in it. Then the letter is written by Stannis/Mance with Theon's help. I think Martin said that the timelines at the end of adwd and the beginning of twow overlap.

That's the main issue with Stannis being behind it, he doesn't know Mance is alive.

Oh shite I didn't even realize this. I think it totally rules out Ramsay. He hates that word in every way, shape, and form. No way in hell he uses it, IMO. Why else would GRRM say at 893749872398 points in the novel how much he hates the use of the word bastard if it didn't mean to lead you to something deeper? I don't know, maybe I'm looking too much into it, but I never even thought about that part of the letter.

Even though the letter uses the word bastard, unless it was written by theon, I dont know of anyone else that would know Ramsay called him "my Reek." That one little part has always made me think it was Ramsay. But I do think (and hope) he is BSing about the whole winning the battle thing.

I like the Mance theory, Mance is actually one of the only non-Bolton characters who would have all the info from the letter. Mance was around the castle with his ladies so he would be aware of the Reek thing.

I don't think Mel would have burned a fake Mance without telling Stannis.

See I'm of the theory that the "my Reek" bit along with some other verbiage from the letter suggests that Theon may have dictated it to Stannis.
