Don't know if fiction is on the table, but if you haven't read Thomas Harris then I think you would really enjoy them. Silence of the Lambs is a masterpiece and Red Dragon is also a very very good read.

Not serial killers per se, but they did murder a family.

This is indeed a good book. I'm not sure it really qualifies as "about serial killer(s)," but it's a very good read.

I like Mailer's stuff, though some of it can get kind of strange (like Ancient Evenings). The guy could write.
