re: LAFAYETTE Deer processing - duffer8008
I agree Courvelle 10000%. His prices are outrageous, but he’s an awesome and talented guy. Chadleys for everything other than sausage. I get Lagneaux’s to do my sausage. ...

re: Pellet Grills - duffer8008
Love my 590. Would get the 700 if I had to do again. 2 medium briskets were about the max I could do, and I'd like the space. That being said, it's amazing grill with outstanding customer support. Spoke to the owners when I called their customer service number to discuss some questions I had bef...

re: Deer Lease prices eastern Amite County, MS - duffer8008
Mix of pine and hardwood about 50/50. They want around $28/acre. I think it’s high for the type of deer that have been shot on the property. Not really great genes. ...

Deer Lease prices eastern Amite County, MS - duffer8008
Looking at a lease east of Liberty in Amite County, MS for next year. Trying to get a ball park idea of what leases in the area are going for? Feel like what they’re asking is way high. Any input would be greatly appreciated. ...

re: Deer Processing around Lafayette - duffer8008
I like Lagneaux's and Acadian. Really like the fresh and smoked sausage from both. Neither are cheap, but they do very good packaging and labeling. ...

re: Sous vide container - what size? - duffer8008
I use a 12 qt restaurant grade container. Camwear I think. You can find sous vide specific lid for most of them. Amazon has a bunch of various items. Sometimes I'll still use a tall stockpot if I have a long item i.e. a Tomahawk Ribeye....

I love when I ask myself the conscious question of ""did you proof your post" and my booze brain responds "Nah...I'm sure you typed everything correctly"....I will say the "chafing" autocorrect seems strangely appropriate based on this awful weather. ...

re: square root on magazine - update w/ review in OP - duffer8008
Went last Thursday after the NOWFE Vinloa tasting (which will probably be the last time I attend the Glazer/Republic suck-fest it's become.) I'm a big fan of these guys and usually visit route 2 out of every 3 times I go to NO. Thought this place was outstanding, but you have to know what you're i...

re: NYC: Scarpetta or Gramercy Tavern - duffer8008
Totally agree on the GT. Went about a month ago got the 7 course tasting (which ends up being closer to 12 once you count all the extra goodies). Arctic Char stood out, butter fish stood out, worst course was probably the red meat course at the end sirloin was good but didn't blow me away. ...

re: Advice on stepping up my wine knowledge? - duffer8008
Are you in Lafayette? If so, start hanging out at Philippe's. Walk in introduce yourself to Philippe or Ben Leger, and tell them exactly what you've written. "I don't know a lot, I want to learn more, I like "X" kind of wine and I typically spend "X" dollars on a bottle." They'll be able...
