I’ll be there for a week to day as I please. What are the best cities and small towns? Must see attractions?

I’m a music, food, people, and history guy.

Currently thinking a couple three days to Galway/Dingle/Aran isles.
Couple nights in Dublin and Belfast.

Any advice is appreciated.

Spend more time in the west. Galway is great, it looks like what you think Ireland cities look like. You can also catch a trad session most nights. Aran islands may be tough to do in January, depending on weather. It definitely won't be bike riding weather.

See the Cliffs of Moher on your way to dingle. Dublin is cool, but it's more of just another international city. Belfast has a whole different feel than the rest of Ireland, but definitely interesting. A black taxi tour is a good way to learn about The Troubles and see a lot of history.

Read your post again. Just three days in the west, you can stay in Galway and take day trips to where you want to see, then take the train to Dublin.

Spent a week in Ireland this past May. Landed in Dublin and drove straight to Galway. Worked our war around the western coast. Galway, Dingle, Killarney and back to Dublin.
Cliffs of Moher was amazing. Slea Head Drive from Dingle was breathtaking as well. We also took a jaunting car through the Gap of Dunloe. One of a kind experience.
Dublin was our least favorite stop by FAR. No unique culture- could have been a big city in any country.

Not far from Dublin:

Cashel for live traditional Irish dancing. Cahir is nearby

Kilkenny is beautiful.

If you are interested in the Galway/Dingle/Cliffs of Moher look at staying in places like Tralee or Killarney.

And if you are planning to see Belfast, make some time to see the Giants Causeway. Maybe even a drive from Belfast to Derry with a stay in either city.
