Need Recommendations for a Summertime Beach/Fishing Vacation...

I am looking for a place to visit for a week or so where I can surf fish and my wife can lay on the beach. The criteria are:
1. Fishing good enough that I can catch dinner each day from the beach. Optimally, I would like cook it on the beach over coals. That is probably not possible at most spots in the US, though.
2. Not overly crowded. It's summertime, there will be people but a Destin-like scene is not one I would entertain.
3. Reasonable priced. The max budget for a week-long trip for two is $8,000. Neither of us require a swanky resort but would not rule it out if it meets all criteria.
I am open to locations on oceans, rivers, and inland lakes. I've read a little about the following but need many more suggestions as I don't see any of these hitting the mark.
North Florida coast - the beaches are great for her but I never found the fishing very good and it is outrageously crowded.
Outer Banks, NC - seems like the fishing is good but I know nothing else about it.
Seattle - Fishing is great but are there any beaches at all?
Florida Keys - never been but it seems to have both activities. Wil they be overrun with tourists?

You should look at the south FL towns of Stuart, Fort Pierce, and Sebastian. Hutchinson Island. Its a secluded area of Florida between Daytona and Miami.
Fishing from the beach and piers are welcome, it is not crowded, and you can schedule a charter if you get tired of fishing from the beach.
Not swanky, but there are some great restaurants. Most bars are laid back and many have live music.
You can probably find a condo for under $150/night within a block or two of the beach. If you want an ocean view, its going to cost you at least double that.

Surf fishing from the Keys has a steep learning curve. There’s just not a lot of shoreline access. You’ll definitely want to do your homework. Likely to be crowded; the FWC regs do its best to make sure no recreational angler can take anything home during much of the year. Frankly; much of what you’ll catch from shore there isn’t good table fare anyway. Jacks, mackerel, etc.

Go to Cape San Blas, FL. It's Appalachicola/St George -ish in location.
It's gulf fishing, as you appear to be accustomed to.
There are no condos on the cape.
You are at the inflection point where the beautiful western gulf bumps against the pool-skimmer NE gulf. There is a lot of good fishing out there.
The only limitation might be your price point.

This is the best answer for the panhandle. If you stay on St. George in the Plantation you can fish not only the beach but also the cut. And if you have access to a dock on the bay side, you can fish that.
