1. Is there any reason May/June/July would not be a good idea?
Ice caves will not be an option and less of a chance to seeing the northern lights. Mid March is when the "winter" stuff starts shutting down.
I am not redoing the pics, but here is the full photobucket from the trip if anyone cares.

For real? You can access them year around locally, though winter is better

Golden circle tour with snowmobile at the end
Four hour boat ride for the Northern Lights
Blue Lagoon'
Ice Cave tour to either Crystal cave or Katla.
There are so many possible excursions that it was hard to cross things off the list. I wanted to check out Diamond beach, but it's just too long of a haul and would burn an entire day. We also wanted the snorkeling tour but reluctantly crossed that off as well. Maybe we'll make it back in a few years for a longer Summer tour and catch a few things that we miss this trip.

It started out with godawful luck. The bad weather in the south east delayed our Houston to Boston (via Atlanta flight) so we were 3 hours late. This caused us to miss our Iceland air flight. I had to buy a one way ticket for two people the following night ($1400) and stayed at the ONLY available hotel near Logan airport ($405). So that little hiccup cost me 2 grand.
ETA: Flying was brand new to me, so I wasn't aware of the rules. I'm sure that you guys know that if you miss your original flight (for whatever reason), they immediately cancel your seat in your RETURN flight. I was unaware of this and it cost me dearly. Iceland air notified me when i went to print our boarding pass that our seats had been cancelled "because we failed to make the original flight". I argued that i paid for two seats on a plane that was not due to take off for another 4 hours...it did not matter to them and they smiled as they told me to book another one way ticket home. So, in all, the original missed flight due to weather delay cost me roughly 4 grand.

The food is interesting
I had a great visit several years ago and learned a bit about the cuisine from some faculty at the university. Horse meat is popular; those small horses do well in the climate, and some are raised for slaughter. Shark meat that has been buried in the ground to rot is a specialty. After you've eaten a bit and had enough alcohol it starts tasting like brie. Puffin is tasty, and whale meat is available,
Absolutely fascinating place and people.

I ordered a horse steak on my trip. It was very lean, similar to a deer backstrap.

Since this thread was bumped, maybe someone can answer this….
My son is looking at going for a week for a college course. Could you give me an estimation of what he would spend per day (regular food, regular sight seeing, etc.)?

A lot
Just normal meals, nowhere fancy or anything just your normal restaurant, are easly ~$40-50 without alchol or anything. You can find some cheaper stuff, obviously, but I'd say on average that is what each meal will be about if he went super simple, easily can be $60-100 without blinking though. Now, most of the hotels serve breakfast and the ones I was at were all a good breakfast, so that helps some.
I booked with a tour group, so I can't help much on the siteseeing costs as it was all included in our package.

You can drive around the island in a day so every thing is open, the hot spring baths, volcanic geysers, black sand beach, dry suit diving, and fishing.
Reykjavík has great night life and bar scene. DO NOT buy bottled water, its one of the few places in the world where tap water is more pure than the bottle stuff.
