Family of 4 recommendations

Wife and I looking to take a trip with the kids (ages 11 and 5) end of May, beginning of June.
We go to the beach at the end of each summer and back to Disney next year, so those are out the question.
A couple of places we talked about but aren't limited to:
Grand Canyon, San Diego, Denver & surrounding area, Asheville, Austin, Boston, or Charleston.
Main concern is my 5 year old and keeping her entertained.
Any recommendations are greatly appreciated.

In the same boat. Thinking of doing Denver/Colorado Springs for a couple of days and then spending a couple in a mountain town. I think they'd like to ride a train and do some toobing

Honestly, I don’t recommend Boston for traveling with a 5-year-old. Most of the family friendly tourist stuff is largely historic, and it would bore the life out of a small kid. Not to mention it’s a lot of walking.
Of those options, I think San Diego would be good with the Zoo and all.

Seattle would be good, 5 year old may be too young? Tons of great museums though, whale watching, etc.
Chicago would be awesome. Tons of great museums, catch a baseball game, good eats, enjoy the big city, etc.
San Diego would be solid. San Fran?
Jackson hole or another western trip.

Wife and I did San Fran/Sonoma last year. Awesome trip to say the least.
Besides those locations mentioned, anyone ever did a Disney Cruise? Worth it?

I have been on all the Disney Ships. They are by far the best cruise for families. Only issue is if you dont want to take the kids out of school the cost when schools are out pushes the limit on value. Expect 7k to start for a 7 day cruise in those months.
The buildup for a disney cruise is great for the kids though. They send you mail about your cruise then a personalized booklet then you can have characters call to tell your kids about the trip. If you stay at a disney resort they do some simular things. All other cruise lines you have to print your own shite. Its just a nice touch.
Service is top notch they sit you in a different restaurant each night and your dining staff moves with you. They handle everything for parents. They even will cut your kid's food.
If you wanted to try it I would recommend 4 day out of Port Canaveral. If your little girl likes Beauty and the Beast they now have the live performance.

Grand Canyon is awesome but really crowded and really hot in June. I do love to see families out enjoying the outdoors though. I know my most memorable family vacations as a child are from Park visits or camping trips.

It's enough to enjoy it and get hooked then go to wdw for 3 days after. You get a sea day which gives you time to enjoy the ship.

One reason to start with the short cruise is if you like it you can book a future cruise or just a placeholder on board that gets you 10% off the price and 200 onboard credit only 100 if you dont book at least 7 day cruise..
You also get a nice gift in all future cruises. We typically get a disney beach bag and some nice tumblers in our cabin on the first day.

San Diego is a great family destination. The zoo is incredible, so is the associated Safari Park. Each of those is a minimum half day. Throw in a visit to see the seals at La Jolla, touring one of the ship museums in the harbor, a ride out to Sunset Cliffs for tide pools and the sunset....throw in fish tacos, a couple of good outdoor markets, Balboa Park and the Padres.

One less expensive but still good option is Chattanooga. DC is always pretty good for kids, too. We did a San Diego to San Fran trip once, hit up Legoland, Disneyland, LA, Big Sur. It was a lot of fun.
