There used to be this street performer on pearl street in boulder 20 plus years ago, you could name a zip code and not only could he tell you what city but he would name streets and places nearby.... freaking idiot savant.

Rent a cabin in the middle of nowhere and enjoy the nature. CO 7 between Lyons and Estes park has some good Airbnb.

We had planned on spending tons of money in there but left with a handful of crappy keychains.

Longmont and Loveland have some tourist offerings very close to Estes Park area. Great breweries and check out the elk and bighorn sheep on the drive into Estes.

Red Rocks ampitheater ....take fixings for a picnic.
To see wildlife, the NOAA building up on the flatirons has a huge deer population which the locals can't bring themselves to cull, but guarantee you'll see deer.
Casa Bonita...check their website to see when the cliff divers are happening.
If you've read Mitchner's book Colorado, you'd enjoy the Denver Museum of Natural History.
Bolder: you'll never be hip enough, athletic enough, or ______ enough to appreciate the area around the university. Unless you rent a bike and breeze up to Rocky Mountain Park.

FYI, Colorodo is hosting USC in Boulder Friday night, 8pm. Not the same experience as an SEC game, but seeing Ralphie run in person is something to check off your bucket list.
Pearl Street in downtown Boulder is the place to go to take a stroll - several block pedestrian mall - with plenty of great restaurants, but they're pretty pricey. Not sure any of them are "can't miss", but several are pretty darn good. Oak on Fourteenth, Salt, The Med, Chophouse, Pizzeria Locale,...
