Can some of you give me one or two <$1000 mirrorless or DSLR + lens setups for someone with no real photography experience and wants to take decent outdoor photos that can be blown up past 18x20 and framed.

More expensive cameras don't take better photos, a better trained photographer takes better photos. This may seem like a cliché, but it is true.

A more expensive camera and lens only allow the photographer more tools for the trade. I wouldn't spend a ton of money on a camera until you decide you really want one or you will just end up with a $1000 point and shoot.

The first photo below was taken by my 10 year old daughter at the New Orleans Air Show last year, with a Canon T1i, that I bought used for $100. It had a cheap kit lens on it.

The second photo below was taken by me with my $2500 camera and a $1500 lens.

I carry two cameras when I go out to shoot, my $2500 Canon 5Diii, and the cheap $100 Canon (it was something like $600 when it was new). The cheap camera takes photos just as good as my $2500 camera in a normal, well lit area.

Looks great at night!

Took this at the Alcázar of Seville. You may remember it from Game of Thrones, where it stood in for Dorne. The dumb sand snakes posted up here in Season 5;
"Unbowed, Unbent, Unbroken". I'm basically standing where the one of the far right is standing in the 2nd picture.
