At this point I believe these advertising companies have a back door.
I don't think they need one because everyone else you know is unintentionally selling you out. People assume they're getting this info from a very broad, "always on" eavesdropping campaign. If that were true there'd be a data trail and it would have been written or blogged about 10 times over already. I think there's just a ton of singals intelligence and it's way more revealing than people realize.

Sure, that explains the sofa ad, but what about the shock collar ad? Op says he said it aloud in jest. There's no indication that the wife was googling for shock collars.
I was of the same mindset until I switched from an iPhone to a Pixel. Too many ads popped up that were only talked about and I'm fairly certain that nobody in my house or on common IPs googled.

Get a VPN
That's not going to trick google. They have GPS and device info, along with tons of other info like when you use google services or load ads.
I would venture to guess that google assistant itself is going to relay source IP to google. For other services, google may be able to extract your source IP out of x-forwarded proto headers.
Google is doing big data in ways that we can barely comprehend. They are collecting so much and are really figuring out how to efficiently link different bits of data from many sources together to create a kind of profile history on you.

I have a pixel and get no pop ups at all. You have to lock your shite down when you get the phone. Google all the settings you need to change on the pixel......

Seriously, read up on what settings to change. I also put my phone in airplane mode when I go into any store. Stores grab all your data and contacts and track you in their store to see what you are looking at.

Well that sounds easy and convenient. Who needs to keep their phone on when they're at the store?

Your devices are always listening.
And I would be more concerned your phone thinks you are an Ohio STate and Penn State fan.

Same here, happens a lot. We have talked about off the wall stuff in the office to test and related info shows up in the feed almost always.

We have noticed the same thing. I have an OG pixel and lately my facebook/google ads have picked up things I've just talked about and never would have searched. My dad noticed the same thing. I bet if we truly knew the extent of spying that was done on us, we would be shocked into some unibomber life.

This is why the only true way to get way from this is to most likely only have a single point of internet connectivity in houses and not to use smartphones, use a high quality VPN, and no other smart or even modern gadgets (the Samsung fridge debacle). And even then it's at least risky and probably not worth it.

People keep saying this, but it's not going to trick google.

Is the spying problematic or helpful? I mean I’m sure they have lots of data on you that we all agree doesn’t need to be leaked or shared, but for shopping behavior, is it really that bad? I kind of like the fact that they show me things that I am interested in and in general, I find it to be helpful. Now I have to exert self control to not buy it, but that’s the same thing if I just walk into a store and browse my favorite section to kill time.

Yesterday morning the wife and I were talking about the need to exercise more. I made the comment about how we needed to get back to walking in the evenings and letting the kids ride their bikes more often. Last night (about 12 hours later), tigerdroppings ads are showing me kids bikes. This was on iPhones.
We do have an echo show in the kitchen. My wife was telling me a few days ago about a white bean chili that she bought from Costco that was pretty decent. The next day I see a ad on the echo for a white bean chili recipe.
I don’t typically get bothered with the ‘listening’ devices because of the convenience they provide. I guess I always been pretty lax about it because we are pretty boring people. But this shite is pretty creepy and it isn’t even google.

It's out of control. Makes me wonder how many devices are listening to us constantly.
