Again, if they wanted to create a profile on you, they could easily do so with those “digital bits and pieces.” In fact, they could do it more discreetly as the analysis would run on their servers where nobody can see it. Do you really think Apple or Google couldn’t tie “CAD703X” and your post history to your real name, occupation, date of birth, bank accounts, purchase history, search results, etc. if they wanted to? Do you really think they need an LLM on your phone to then create a profile of you based on those results? Why?
The entire point of running the LLM locally is to keep that information out of Apple’s hands in the first place, which creates an extra layer of privacy protection. If you don’t think believe that, then why would you expect any of that information to be private today?
Put it another way - the AI integration (from what I can tell) mainly applies to Siri. If you think they’re going to collect info and create a profile based on everything you ask Siri, why wouldn’t they be doing that now on their machines? If you think Siri is going to be collecting data at all times whether you use it or not, why wouldn’t you think it’s collecting data at all times right now?
If you aren’t willing to engage in any serious conversation about security measures due to a lack of trust, then you shouldn’t have any reason to believe any of your information is private to begin with.

For a paranoid dude, you're a little behind the times. I'm not a fan of the AI shift either, but AI has never been needed to build profiles on people.

Apple has said OpenAI being exclusive is not a on long term thing. I'd bet Apple's plan is to have an AI store and get a 30% cut of the paid consumer AI market.
This is a first step, the next step should be better.
