Mayhaw jelly help needed

Every few years I make mayhay jelly. Last year I bought my mayhaw juice from a new grower. I noticed that the juice was a much brighter red then I have ever used before but didn't think much about it. Used same recipe I have always used but it came out so tart I had to throw it away. I know it's not a case of prior batches being watered down because I have bought the berries in the past and squeezed the juice with no issues.
So, my question is do I water down the juice and/or increase the sugar amount? The bad part of jelly making is you can't taste it to determine if it's right. Hate to have to throw out another batch but I am at a loss of how to adjust the recipe.
Any help would be appreciated.

Chicken with a grease gravy recipe

My husband seldom asks for me to cook anything particular so when he does I am delighted for something new on the menu. He came home and asked for chicken with a grease gravy. Never made it so would really appreciate some recipes and tips.

Just got an alert that my CC had an online transaction on StubHub. Not mine. Waiting on CC company to call me back. This is the second time in three years. How are they getting my CC info? You have to have the security code for an online transaction. Card has not been used in 3 weeks. Any suggestions on how to prevent this from happening again?

Hi All, I have written several posts about my journey with pancreatic cancer. In my last post the doctors were optimistic that after the Whipple surgery I had beat it. Unfortunately that is not the case. It is back and I have been given approximately 2 years. I wanted to thank everyone who have been so supportive of me through out this ordeal. I don't post often but y'all have no idea how many times I have sat in chemo or some doctor's office and passed time reading this board. Right now I'm sitting here with an IV in my arm prepping for a PET scan and I am on the OT! Not looking for any sympathy, I am going to continue to fight but I have accepted what will happen. Thanks everyone! Oh, and FYI I am a female not a baw!

Road trip - hotel booking

We are heading to Branson in a few weeks. Due to a recent surgery we are going to break the drive up into two days. I want to book the road trip room in advance while my husband wants to just wing it. Which is more economical booking in advance or walking in and staying in what is available? Plan on stopping a little south of Little Rock.

How to find a lawyer who specializes in leases

I am hoping someone could advise me on the best steps to find an attorney in the Lafayette area who specializes in commercial rental property leases. I own a commercial piece of property that is tied up in a long term lease. I need to find a competent, aggressive attorney to review the lease for any potential loopholes as well as advise on eviction proceedings(non-payment) and breaking the lease.
I have looked online and found several attorneys who list leases as one of their specialties but that could be anything from oil leases to land leases. Any advice on where to look for someone specializing in Commercial leases in the Lafayette area would really be appreciated.

Cabin rental - no sheets or towels???

Good morning,
I have been looking at a beautiful cottage rental in Maine in the Moosehead lake region for a trip planned in 7/18. I contacted the owners and was informed they do not supply sheets or towels for the rental! They claim it is normal for rentals in that area. There is not a washer and dryer in the cottage so we would have to bring enough towels for a week. Has anyone ever heard of this practice?

Pancreatic cancer update - Part 3

Hi All,
For those of you who have been following my PC cancer saga here is the latest.
I last posted the weekend before my Whipple surgery (to remove the tumor) and I want to apologise for not posting sooner that I am still alive! I will admit there are days I have doubts but they are getting fewer and farther between.
The surgery went well and the tumor is gone! Pathology results show currently no sign of disease! It more than likely will will return, but for now we are good (I know it is confusing as the tumor is 'gone' but that is PC). I was in the hospital for 15 days. When I got home I was put on a feeding tube which lasted about 5 days. I couldn't tolerate the feeding tube or eating and was sick to my stomach for 2 weeks. Go back to my surgeon and find out I was not prescribed a medication to help the food move out of my stomach! So, my recovery was pushed back by two weeks.
I am now starting to feel better and take more of an interest on things going on.
So, that is the latest. Thank all of you for the thoughts and prayers you sent my way before the surgery, please keep them coming as I can still use them.
Oh, one bummer - found out I have to go through 6 months more of chemo, starts next Monday :(!

I promised I would keep my friends on TD updated on any developments so here is the latest.
I made it through the 28 days of radiation but I will admit it was rough. I don't think it was the radiation so much as the oral chemo that knocked me down. I had fewer side effects with the regular (through a port) chemo then the pill form! I now have neuropathy in my feet (no feeling) but hopefully it will pass with time. O.k. now for the good news. When this adventure began my tumor markers were at 1700, after chemo they dropped to 37 (35 is normal)! Since radiation they are down to 25! My surgeon was so excited and my Whipple surgery is now scheduled for this Wednesday the 28th! He feels the tumor has receded enough from an artery and a vein for him to remove most if not all of the tumor. All of my doctors feel I have a shot at winning this battle! Of course we will know more after surgery but no matter the outcome I am going to fight as long as my quality of life is acceptable (I had a few doubts during the radiation treatments)!
So, please keep me in your thoughts and prayers this Wednesday. As soon as possible I will post on surgery results. Thanks everyone!

450Arrival time at MSY

Next Monday we are flying out of MSY on United @8:12 AM. We will take a shuttle from the Hilton Garden Inn in Kenner to the airport. We have bags to check and are flying first (not a brag need to know if there is a separate security line for First/Priority Members).

Pancreatic Cancer - Update

Hi Everyone,
A few months ago I started a thread when I was diagnosed with stage 3 pancreatic cancer. I received so many supportive responses that I wanted to give anyone who is interested an update.
I began chemo back in November and had my 4th treatment last week. It is not to bad - you have good days and bad days. Bad part is I have chemo every two weeks and I start feeling good on day 11 so I only have 3 days of feeling really great.
The good news is I saw a Radiation Oncologist and he determined I will NOT need radiation! I was really scared of radiation especially the 5 days a week for 5 weeks part. He is also of the opinion that a few more rounds of chemo and I should be a candidate for the Whipple surgery. When I was first diagnosed none of my doctors were talking about it being viable. The Whipple surgery will remove the tumor and extend my life expectancy by about 5 years or more.
I have booked all the arrangements for my first bucket list trip. My husband and I fly out on 2/13 to Alaska to see the Northern Lights at Chena Hot Springs Resort (thanks to RTS for reminding me about Chena). Hopefully we get to see the lights.
Again, I want to thank all of you for your kind words and support.

Diagnosed with pancreatic cancer - any good outcomes?

This week I was diagnosed with Stage 3B pancreatic cancer. Per the doctor with no treatment life expectancy is 6 months, with chemo treatment 2 years. Everything I have read online is depressing - they don't even go past a 5 year life expectancy.
Does anyone know of any good outcomes of pancreatic cancer?

Weeds & sodworms in lawn

A few weeks ago I noticed weeds taking over parts of my yard. I know one is dollar weed and I think the second is Virginia button weed. Researched and determined they could be treated when the temps drop in a few weeks.
Noticed some patches of lawn turning brown and attributed it to the weeds.
Now I hear of the sod worm problem a lot of people are having, walk out in the yard and there are moths so I have both weeds & worms!
What should I tackle first? Not sure which is doing more damage and needs to be killed first.
Please help, not sure what to do to save my grass (St. Augustine). Almost an acre lot.

My husband and I are planning on checking out some different festivals this year. One unique thing I love about the Louisiana festivals is how each one seems to have a local vendor that has a special item. Would love to hear different festival favorites.

Average temp on a Brinkman electric smoker????

For years I had a Brinkman electric smoker that had no temp setting - just plugged it in and let it go. I learned how many hours it took to cook the things I smoked on it.
For Christmas I got a new electric smoker with a temp adjuster and timer. Did some sausage on it based on the recommended time/temp and it came our very well done! Does anyone know what the average temp is on the electric smokers that don't have a temp setting so I can figure out what to set my new one at? I am scared to use it as I don't trust the recommended time/temp chart I have.

Help with beef bottom round rump roast

My mom used to cook the best beef roast I ever tasted. Alas, never watched how she made it and every one I have ever cooked is dry and tough (I know overcooked). Could someone please tell me the best way to cook a moist, tender rump roast (little less then 4 lbs.).
I have tried various recipes I have looked up on the internet but I want something tried and true so I am appealing to the FB experts.
