Who are these professors exactly, what is their background/field of research and are they Mormon?

I do believe it was written by a nearly-illiterate man, it sure reads like it. Given his liking for drink, he was probably drunk as well when he wrote most of it.

How come this 'ancient history' was not known or documented by anyone else at any other time in history? And where is the archeological and documentary evidence for this stuff, can it be that NOBODY, and I mean NOBODY else can corroborate this information?!?!

Those were definitive creeds regarding who God is from the Scriptures. If you don’t worship the God of the Bible, I don’t see how you can call yourself a Christian. It’s the same sort of thing as to when people say Muslims worship the same God. You can’t deny fundamental truths about the identity of God and then claim to worship the same being.

The Resurrection
The Holy Trinity

A lot of people don’t actually know that and that surprised me.

You don’t have to call them Christians if you don’t want to. But yes, they believe those things.

They just simply believe they’re separate entities. They take the fact that Christ prayed to God literally. They believe that all three together form the godhead.

I believe it’s similar to Jehovah’s Witnesses.

Like I said, you don’t have to classify them as Christians if you don’t want to. But they believe in:

The Atonement
The Resurrection
The Holy Trinity

Those are facts.
