It's against FBI policy to know information before an interview?

I'm not sure you know how law enforcement works

Also, you can have info, transcripts etc, and still get the impression someone is being forthright when they actually aren't

You know, like maybe career military intelligence guys

The guy lied to them, and to Pence, and he admitted it to both, was fired, and pleaded guilty

He gave up 5 sessions worth of info before even getting his deal

Right. He lied about what he discussed. From Flynn's plea:

Wow, that changes everything!

So, they already had information that contradicted Flynn’s story, but also noted that Flynn gave no indication that he was lying. Outrageous, I tell ya!

Also the fact Strzok and the other FBI agent had the phone conversation transcript of the Flynn and Russian Ambassador conversation while Flynn was vacationing in the Dominican Republic the FBI compared interview answers with the transcript. In Strzok and the other FBI agent's estimation shortly after the interview Flynn was not deceptive based on the 302 filed shortly after the interview.

But 7 months later after consulting with Andrew McCabe who apparently had a lot of animus with Flynn revised the 302 in August of 2017 to edit the account of Flynn's interview from not lying to lying.

Yes. It is a violation of FBI policy to have a contemporaneous record when interviewing a subject.

According to Dershowitz, this was a perjury trap and an egregious misuse of FBI resources.

He stated that these FBI interviews are supposed to be to obtain new information by asking questions on things they don’t yet know.

Instead, the FBI brought information it already new and questioned Flynn on existing information.

That he says is the definition of a perjury trap and a misuse of FBI resources. And remember - they were sent by Comey.

You’re right. Proper detective training implores the agents to say, “Stop right there. We have evidence that what you are saying is false. Change your story now so you don’t lie to us.”

No wait.... Anyone who has ever watched a single episode of “Law and Order” knows that they will try to use leverage against those who are caught in their own lie.
