This supports the evidence that Israelites are nothing more than a sect of Canaanites that broke off and evolved their religion over time from polytheism into monotheism of what we now call Judaism.

False. Some claims were made without any sort of actual scholarship. Claims btw that were refuted several decades ago

Before Abraham was called by Jehovah God to become a new nation and people, he lived in Ur of the Chaldeans. It’s believed that his family worshipped the moon god. Mohamed’s dad also worshiped the moon god before Mohamed created Islam. It’s the reason the crescent moon is on the Islamic flag.
It’s not surprising that both Jews and Muslims share the same ancestry and early history.

How about artifacts, any other physical evidence of their culture or any mention in the millennia of writings we have from Egypt?

Or maybe it would help if judaism existed at the time they're supposed to have been in Egypt.

While Egpyt isn't Rome or China in terms of preserved documentation, they' pretend as if we're just guessing as to what happened over much of the Egyptian empire. Having a large state with a blossoming bureaucracy always leaves some evidence that's stronger than any religious book posing as a historical work.

Well his daddy changed their name to sound semitic and hide his Polish ancestry. Israel is like the only place were people are not proud of their European heritage. Do they have Irish parades? Cinco de Mayo? Italian parades?

Imagine you have an immunity to say, pancreatic cancer, one of the more painful ones, but you choose to remove that immunity and go through the pain of dying from it.
