Easy. You are allowing the virus to hang around longer and mutate into new variants. One of those variants is going to escape the vaccine eventually.
But really this is all moot anyway. Even with 100% uptake, we were never going to be able to vaccinate everyone in time before this happens anyway. Pfizer and Modernas CEOs both said recently there is going to be an annual Covid shot. They plan on combining it with a flu vaccine all in one shot.
I hope the are wrong and no variants escape the vaccine, but they're probably right.

Several pfizer scientists have discouraged mass vaccination because this practice caused the virus to increase mutation.

Every thing I've seen so far says this is becoming less likely to be the outcome. The vaccines have been handling all variants very well and coronaviruses don't mutate as much as flu viruses. Lastly, the structure of the virus is revealing how much more it can change and the evidence is it doesn't have a whole lot more options.

Your response doesn't match his statement.
It is true, the vaccines reduce infections and transmission. There will be fewer people who get infected by increasing vaccination (alternatively more people infected eventually reduces transmission as well).
Fewer infections isn't the same as "no one would get infected after vaccination."

Intake of vitamin D, Zinc, Vitamin C in order to lesson the effects of COVID?
We could all have taken vitamins, in order to lesson the effects, back when there was no vaccine.
