stole from facebook

quote:

Here's the bacon wrapped & smoked coyote hind leg. I can tell you that it was tender, delicious and in NO way gamey, musky or strong in flavor! My taste testers cleaned the plate! Buttermilk whipped potatoes, sauteed apples with tellicherry pepper, honey and salt all brought together with my Tarheel Mustard BBQ sauce!
Again, this was a male from a trapline in SW PA farm country by my partner Jeremiah Voithofer on his lease that is heavy with corn fed deer and and rabbits. I can't speak for the rest of the country's coyotes but this one was great table fare!

Not knowingly or intentionally. But a lot of my wife's cooking tastes really suspicious -- so maybe I have.

I’ve sizzled some yote in olive oil over a camp fire before. It actually tasted really good. Heart was the best part. Now the next day was a different story. I coulda shite thru a screen door, and stunk like a pole cat.

Problem I have is I grew up in So. Calif. foothills...90% of the yotes were fricken rabid. Shoot-em yes...eat-em nope, and there ain't much I won't eat.

I saw Andrew Zimmerman eat it in NYC with a South American guy at his house. Apparently in third world South American countries it's part of the native diet when times are tough. There is no way I would eat dog and I don't give a shite how you prepare it.
