Really good progressive controllers are not expensive at all anymore and I think all trucks have integrated harnesses that they plug right into. I had a tekonsha P3 ($120ish) in my last truck and it's amazing how much better they are than the old school caveman setups, and far better than the built in controller in my ram. Towing tech has come sooooo far in the past 15 years.

Not end all be all. That’s just gvwr. - your truck weight. Gvwr is a class and not total mechanical potential your truck can handle.

Would I be alright pulling 5100 when I'm rated at 6300? Or is that pushing the envelope. The great scheme in my head would be from Texas to Florida. Nothing in the mountains ever.

You should be fine. My in laws have a Yukon xl and pulled a massive pontoon with no issue. Sway bars help a ton. Just make sure your tires are good and properly aired.
