I'm putting it on my Christmas list. I'll put the budget around $500 or less.

Depends on what you want to do. I have a R&V works 6 gallon.
It's bigger than I need, would probably go smaller if I had to do it again. But you can try a ton of food in a short amount of time.
Works well, oil lasts a long time. Drawback is the noise...It's loud as hell.

Eta: just realized the budget is $500 and not $50. Carry on.

I second this!
My cousin has a 2.5 gallon, single basket and it's amazing. Only con I have with it is what DSD said. It's loud.
Here's a link to all their fryer products.

I was looking at the R&V 4 gallon with the wheels.

I have the RV 4 gallon also. Very easy to use and consistently good results.

Cajun fryer 4 gallon is a frying machine. I’ll fry for 10 people in less than 30 min. And the majority of that time is spent battering fish. If you fry often, it’ll pay for itself in grease... I’ve fried ~20x with same peanut oil and propane tank. I wouldn’t skimp and get the bayou classic version, it’s very thin mettle and felt flimsy as frick compared to Cajun fryer brand.
My next one will probably be their aluminum version... it’s so damn light and won’t rust.

I think that's the one I want. Did you pay roughly $400?
