So we smacked the mats and have some of the bigger ones left whole, scaled/headless and other filleted.

What is your go to for whole flounder? I am thinking of stuffing one but haven't done the deboning before.

TIA

Split down the middle run your knife down the bone all the way to where the fins start getting soft bones. Get your knife on the bottom side and repeat. Make a seafood stuffing with crabmeat and shrimp and bread crumbs. You can Google John folse recipe for a good one.
Stuff it till it looks like a jr high football and bake.
By far my favorite way to have it.

Deboned stuffed with crab meat. I followed Marsh Man Masson's recipe.

Pocket it and stuff it with shrimp and crab meat stuffing. Pocketing is a little work but love the end result. Watch YouTube videos on how to pocket it. Not difficult, just takes a little more time.

My wife just puts unions and bell peppers I. The food processor and cooks it with the shrimp and crab meat.

Debone and fillet flounder. Slice down center and you’ll have 2 fillets from top and 2 fillets from belly side of flounder … other fish will also work

Cook down various vegetables , add shrimp, crabmeat, and crawfish … mix. Add Ritz cracker crumbs as a binder.

Add to fillet and make a roll. Add butter and bake. Top with a Ponthartrain type cream sauce and lump crab meat
