Steve Anderson was the best, but he retired years back.

I paid for many client’s mounts, Freddy Smith the best by far. I heard he’s only doing a limited number now, see if you can get a slot. He’s in French settlement

Everyone will say “their guy” is hands down the best, but different people have different standards on taxidermy. I’m a stickler and super picky, probably because I paint and draw on the side. I notice the small details. So my advice would be go to whatever taxidermist and see their work in person. I can tell you who I guarantee you’ll leave satisfied and impressed with the work they do on deer or turkey. It’s David Bush in St.Amant, but you are going to have a wait and you’re going to have to pay. His turkeys are unbelievable. He doesn’t use fake heads, he skins out the bird’s head, gets it freeze dried then paints them. He had a live turkey and deer as a pet that he studied to make sure every mount was life like Ana anatomically correct.
Good luck, if you’re patient and willing to pay for the best quality I guarantee Mr. David would do a great job.
ETA: I’ve heard good things about Guy Adams. I’ve seen Freddy Smith’s deer bc I’m from the area and a lot of friends have used him. Several have looked average that I’ve seen and the customer wasn’t fully satisfied, but a few friends brag on him.

for what you spend to get a turkey mounted, and then to have to look at it forever, you should ship it to Shipman's in Georgia. they are the best

Guy mounts Speiss’ birds for him. Guy Adams is the best around no doubt. 2253240488
