not really, unless youre talking about in the head, just not a lot of meat on redfish compared to what other fish yield

It's a serrated knife. They have a good one at Academy, but I can't remember the name. It's the only thing to use on reds.

Looks like he is wearing a kevlar glove so, if he loses anything, its going to be above the wrist. Pretty damn impressive either way.

My family used to be in the seafood business where we cut 1,000's of pounds of fish daily. The guy is fast but I've had fish cutters that cleaned jast as fast or even faster. I can't clean that fast with redfish. We used to have orders for restaurants of 50-100lbs of redfish/drum fillets which equals out to having to clean 300lbs of the whole fish. Our cutters might only have 1-2hours to do this along with a ton of other orders. It looks like to me he's just wearing a regular yellow soft glove (that lots of seafood workers use-it has grip on it) and a regular knife. Nothing special about his equipment to me. With filleting, once you know where to cut and how the bones run, you can cut way faster.
