Biggest problem I see is the land is about 2 hours from me. I don't know how often I can go by and check on them.
There was cattle on the land many many years ago... it's wooded with fresh water and roughly 120 acres are pasture

That's a problem. Doable, but it would get old quick and your cows would likely be wild as shite because they would rarely see/interact with any people. You'd need to hire a local hand to check them/fences and be close if they ever get out.

Always fun when you get new additions.
The catch pen I built earlier inn the spring was a bitch. Ran through 1000 board feet of rough cut oak 1x8x16. Perimeter is 120 x 120 with a top and 2 bottom runs of oak and bull panels in the middle. 16x20 cut pen that necks down to a 12' alley and a half tub swing gate into my alley and chute.
Of course im dealing with beef cattle and not 4 feet of horns
Have 5 calves on the ground right now and more due between now and October. Will be glad once I get all my cows in sync

Do you eventually slaughter longhorns for beef? I'd assume so I've just never heard of it?

The beef quality of longhorns is undesirable. They are mainly pasture ornaments and have a market value for their hides for rugs and such and their skulls / horns for decoration.

As to the question about eating the longhorns, yes, they're edible. Not by me, but most get ground at the end of their life cycle. You aren't going to cut big fine steaks out of them.
As Feliciana said, the hide, skull, and ability to rope them between 6 months and 2+ years old is where any real desirability is.

I understand not selling them as fine steak, but it's still beef right? I mean is it actually not good like whitetail deer quality or just not great?

It's extremely lean.
There is a market for it because a lot of people are looking for hormone free, grass fed beef.
For me personally, I'd prefer a big fat ribeye off of an angus.

Their meat is fine as hamburger. I'm sure steaks can be cut out as decent steaks, but it won't compare to other high quality breeds.

Interesting though, yeah I'd honestly think that it would get a ton of publicity right now from healthy eaters and bring top dollar if its really that healthy.

And squeeze from the side. I have that same tub and squeeze/cage. By the time they realize it's a dead end, they're in the cage.
ETA: The P&C chute in the video is probably the most popular longhorn chute.
