It is very intriguing to me. Relatively lightweight, simple, stable, wide, etc. It seems to really be a basic yet high quality kayak. Plus it has the built-in paddle holder.
Some reviews indicate the ride is a little wet, which may discourage some fall and winter fishing, but I'll cross that bridge if I come to it.
All I'd need is a lightweight paddle ($150), roof rack ($250), life jacket ($150), and stopstick ($100) and I'd be ready to go. I could get completely rigged for under $2000.
Speaking of stopsticks, or whatever they're called, do y'all use an anchor system or the sticks fishing the muddy bottoms in LA? Anchor trolley systems and stopsticks both seem easy to use.

Have a stick. Never used it. No trolly for me. I don't want catchy things on my boat. If I anchor,which is rare, I just tie to whatever

I plan to do a lot of nearshore fishing on artificial reefs. I feel I'd need something to stop me from drifting in the current. Maybe Speckledawg can chime in.

those sticks are only so deep and work best in mud. If sandy bottom in more than 6 ft I'd probably bring some kind of mushroom anchor or tiny metal one.

If the current track stays true it'll be a huge mess over that side. Big if at the moment though with how often the track jumps around. Last nights update had it coming up through Vermilion bay/Abbeville

Got an opportunity to buy a used Old Town Vapor 10 along with basic accessories for cheap. The friend I’d be buying from used it for inshore and nearshore fishing on the MS Coast. It’d be cheap and it’s lightweight. Any ideas about this yak?

I would not get that OT Vapor kayak. Its a sit in and will not be conducive to fishing. It'll also be hot as hell and the short length means it'll be slow and not track well for longer paddles.
Im not sure what you mean by "good deal" but you should be able to find a much better kayak that is designed for fishing, stable enough to stand in with a lawn chair style seat for around $400-$500.

I am stuck going back and forth between dropping a couple hundred on a 12’ used paddle Kayak just to get my feet wet on kayak fishing or just biting the bullet and dropping a couple grand on a pedal Hobie.
Most likely I’ll start with a paddle kayak and go from there. Even if I upgrade to a peddle eventually it won’t hurt to have a paddle as well.

Have you visited Everything Kayak in Gulfport? They have an indoor pool where you can try out different kayaks they stock.
They also do rentals, so rent some different models and see which you like best.
The main thing is try before you buy.

I got my used pedal drive (native) for 1500. They are 2500 new. It was in flawless condition when I got it. Just a thought. I spent years in a pelican. Not worth it
