Rice Perlo. South Carolina Style because I rolled the tarp over it. Still a bit dark, tho.

Brisket on the smoker for tomorrow. Shrimp about to go into the boiling pot for today.

Just pulled a brisket and pork shoulder off the smoker. I tried something new with the pork shoulder. I cut it in half but still connected and smoked that way. Way more bark that way.

Strick’s in Hattiesburg made the hot dogs and andouille. My taxidermist in MO made the brats. They put Johnsonville to shame.

Planned on picking up some crawfish this evening, but local place was sold out. They had snow crab legs for $5.99/lb, so had to pivot.
