Since I bought a good vacuum sealer I don’t even put dates on deer meat anymore. I can’t tell if it’s 6 months or 3 yrs old.

I just ate some breakfast sausage and backstrap I found in my freezer from 2017. Tasted the same as the day I put it in there.

I’ll have to keep that in mind. I usually toss after 2 years or so. I won’t be so quick from here on out.

I'm sure I've told this story before, but when my grandpa passed several years ago in the spring time, we ended up cleaning their house out to sell it at Thanksgiving that year. I wanted his old chest freezer. We threw away anything with a date older than 3 years, or if it didn't have a date and we couldn't see what was in there. I loaded it in a U-Haul and drove it home, then ran an extension cord out to it until I could unload it the next day. I probably had a dozen meals out of the deer meat that was left, and every bite of it was fine. So definitely a couple of years if packaged properly.

If it doesn't look bad, it almost certainly is not bad. If it doesn't look or smell bad when its defrosted its absolutely not bad.

I've eaten 4 year old deer meat many times. Also thrown out 1 year old meat that had a bag leak and got freezer burnt to shite. Well packed itll keep a very long time.

I found one backstrap and a pack of ground deer meat that was "lost" in my freezer that was over 3 years old, but vacuum packaged and it was still good when I defrosted it.

I wrap meat in pallet wrap. You can buy the rolls of it at big box hardware stores (Home Depot, Lowe’s). It takes two people to wrap it, but there’s nothing better. Basically vacuum seals it and prevents freezer burn.

To demonstrate how good it is, my brother called me up a couple years ago and told me he found an elk roast I had given him in the bottom of his chest freezer. It was 7 years old. He thawed it and cooked it and said it was delicious.
