I'm sort of confused about where and what you're talking about. Your choice of locations and species doesn't mix in my brain

I could have sunk a boat with them in big lake this past Friday if we kept them all.

We did keep around 10 of the bigger ones

Add me to the "confused list", but yes, white trout are thick inside everywhere right now.

Poach em and make fish cakes with em. Vac seal the fish cakes for Lenten fish sandwiches.

Yeah, I don't freeze them, but I'll keep a pile if frying fish within the next week or so. My kids wear them out.

This... I keep them if they are big enough for decent fillets and fry them fresh.

Hell in the summer I might have 3-6 different species go into the same fryer in an evening.

I'm not a coastal fishing guy so no clue what a white trout is. I've caught cutthroat, rainbow, browns and specks but no whites.

I caught some nice stripers deadsticking (different than deadsticking largemouth) then 3 big blue cats today. Will go out again tomorrow.

Pick lives on DI, dog river is a big river in mobile bay about 15 minutes from him i think. This all means that the fish migration to the rivers and deep holes has begun
