I'm partial to 80's and have a 96 myself. They are so damn simple and capable. The straight six is basically a tractor engine and you could maybe find one with factory lockers if offroading is a thing you'd do on your travels. I'd probably suggest a 96 or 97 in the 80 series as the best all around LC SUV.
If creature comforts are more important to you and your family, it would be hard to beat a 2003-2005 100 series IMO. I have two 2006's due to the added HP of the VVT-I but the emmissions systems are a little more finicky than the earlier 100 series models. lots of enthusiasts seek out the earlier 100 series models with the 4 speed trannys, since some were available with optional rear lockers, but try and avoid the 2000 year models which are known to have transmission failure issues.

We have all 3 mentioned ha. My twin daughters share my wife’s old 2017 GX, I’m the original owner of a ‘97 LC we keep at the farm now, and we have a 18 LC Prado at our mission in Peru.
Our GX/Prado have 95% same DNA except the Prado is a 5 speed manual and doesn’t have ride height adjustment. We have taken that Prado through hell and back in the Amazon, often towing a trailer.
‘97 LC has been a tank but I did have a blown head gasket at 215k and it is slow as molasses. With the triple lockers and BFG Mud terrains, I drive it any where I would our sxs. We just replaced all leather in it last year. Best car I’ve ever owned.
I love the platforms and they’ve been proven worldwide for decades.

Been shopping and found a 2017 with only 15,000 miles.
Carfax shows that it was owned in new york. Won't have an opportunity to look before I make the leap (carvana).
If it had been owned in Alabama or a southern state, I don't think I'd hesitate.
Am I overworrying, or is this justified?

Look underneath before taking ownership. Salt is hell on the undercarriage.
