I did a little digging into the ozone generators, and there's somebody that says it will cause plastics, rubber and leather to break down. So, that's a no-go for me, at least for buying the generator (sounds like you wouldn't want to use it much).
I'm thinking good old fashioned carpet shampoo, and change your cabin filter, is the way to go.
And that's the easiest thing for me with a convertible- just shampoo it good, drop the top and let it sit out in the sun awhile to dry out.

Bang a time keeper in your truck. Smell will change for sure

If it’s soaked into the foam (it has), then you are going to have to replace the foam of the seat. You can ozone it, spray it, little tree it, or whatever else you want. Unless you get ride of that apartment for bacteria, you will never get rid of it.

Baking Soda and charcoal are good odor absorbers. Coffee is another good thing to use. I worked at a company that loaded food grade produces into 18 wheelers.
Some of those truck really stunk. Coffee was sprinkled on the floor and usually the smell was gone after a while.

Correct O3 or ozone will attach to the carbon atoms and neutralize the smell

Armor All FX
This a fogger. Turn it on with rhe AC cranked to max. Wait 15 minutes. Then air it out for 10. Had to use a work truck for two weeks and it stunk bad. This eliminated the stink.

two cans of flavored skoal. open and put both cans in the cupholders until they dry out.

cherry used to work the best but, not sure if they still make it.

Crinkled up newspapers under the seats. Super cheap solution. I always store my icechests with some in them between trips.

We used to go to church with a guy that owned a car dealership. He always said, place a par of deodorant soap under one of the seat.
Good luck

We have sort of the same problem with an old mobile home we bought. Has real hardwood floors in it. Has an old musty smell in it. I’ve mopped with vinegar and water, pinesol and water, sprinkled baking soda and mopped, sprayed Lysol on them and still smells.

This works for cigarette smells and vomit , not sure if it works for others, but it’s cheap.
Place a bowl of vinegar in the cab for a few days.
