Good thread to bump. I just pulled out four blocks of 6 month old gumbo. I freeze in Tupperware, then use the seal a meal vacuum system to suck out the air and make airtight.

I’m cooking some right now for tomorrow. We will jar some of it and keep it in the fridge. Some will be frozen as well.

This is why I freeze gumbo and other liquid sauces, soups, etouffes, etc. in quart freezer bags and make sure to get ALL the air out of the bag before zipping it shut.
No air, much less chance of freezer burn in the long run.

This. To help get air out, fill the sink with water. Fill your bag and dip the bag down in the water. The pressure will push air out. Zip up once all air is out.

Vacmaster vp215 it’s pricey but worth every penny when it comes to freezing food! Fish, meat, liquid foods etc. It increases the longevity in the freezer anywhere from 8 to 12 months. Highly recommend one. I’ve had mine for about 6 years now and it is has paid for itself at least 10 times over.

I freeze soups and gumbos in the Guidrys chopped veggie containers for a couple of days and then vac seal.
I'd pull out a 2 year old pack and eat with no issue.

another tip. I freeze a lot of gumbos/soups in guidry's containers. I leave about 1.5 inches of headspace. After it is frozen I add water on top then put back in the freezer.
