Someone convince me that there’s a better cut of fresh water fish then flathead (goujon) belly. Wife (no pics) wanted some fried fish for dinner, opened the fridge and noticed a bag from last summer. Fried it and some bass (second favorite) and it wasn’t close. Absolutely delicious.

If you’ve ever had spotted cat belly you’ll change your mind. Close 2nd is yellow cat.

It’s the best piece of a freshwater fish in North America. I like to take the bellies of big ones and trim up and grill. Everyone I’ve had try it swears they never thought it could be that good.



shite. I’m gonna have to take one out of the freezer to grill tomorrow night now.

They are. And the fried belly meat the OP described is the best it gets as far as I’m concerned. Just a play off the thread where people called the majestic white perch al sorts of other funny names. Including bream smdh

Agree with the descriptive names being synonymous and the fact the belly meat is insanely good.

My favorite catfish to catch by far and the one with the best belly meat.

I target them with using live perch on a large circle hook when fishing the Mississippi River. Last time I went out I caught 4 large cat that topped 80 lbs. total weight and had 2 flatheads and 2 blues. I put lots of filets in the freezer that night and keep the belly meat separate from the filet meat off the sides.

Love flatheads, but I don't like belly meat from any fish.

Do you have any success running trot lines with live perch? Thought about giving it a try this summer on the Arkansas River near me.

Is the oil and texture near perfect?


I remember being at hatteras surf fishing for Red Drum. My cousin is an oysterman on the Chesapeake.

He said to go to the tuna dock at Oregon inlet. They were cutting the tuna and would give the tuna belly meat to Drum fishers. Said the tuna belly was tender and oily.

I've never used live perch on trot lines and the last time I ran any was way back in the early 70's when I'd use catalpa worms as bait.

That said, I don't see why it wouldn't work. I now only fish with rods and reels with 3-4 oz. lead sinkers to hold the bottom with bait suspended about 2 ft. above that.

Good. Kids need to learn how to catch stuff without a rod and reel.

We do quite well close to the lock/dams on the Red River. Live sunfish. Best are what I used to call pumpkin seeds, but now think they are dollar sunfish. Small fast aggressive suckers with lots of color.

one of those “kids cast nets” is next.
They love it if you catch mullet at the beach.

My personal favorite is a big ol bream filet on white bread w/ a couple dabs of Louisiana hot sauce.

But goujon belly (and bass as you mentioned) is seriously good eating too.
