What is the best type of light to use when gigging doormats?

Look up “Coastal Floundering Lights” on Facebook. Ive had mine for the last 5 yrs. The twin head light.
There’s a lot of people making and selling them. They are mostly all the same. PVC stick with a submersible light at the bottom. Stick the light under water. Generally they have leads that clip into a small battery you can carry around in a backpack

i made mine with a ryobi battery attachement on one end Amazon

PVC and a dive light attached with an adjustable hose clamp.
1 45 and 1 “T” coupling if you want to add a handle on it. Can either cap both ends or leave it open and slide your gig into the long side.
You won’t get the wider coverage like the double lights, but an LED dive light will give you plenty.

Coleman mantle lantern with aluminum foil wrapped around the back of it for focus. Make sure your gig is homemade out of a broomstick and a 20 penny nail, and for gods sake shuffle your feet

Best one I've had is one make by Alex Chauppetta (bought it from him on FB). He works in NOLA but lives in Mississippi I think. Make sure to go with the yellow light. It helps a lot in murky water. Small cube light on the end.
The clear light is nice--but suspended dirt/silt in water obscures your visibility with the clear. The yellow somehow cuts through it. (I have no idea why--that's just my experience).

And make sure to look for the flounders with the long skinny tails.
One of my cousins thought he spotted a flounder just under the sand and it was a stingray. Bastard got hit in his shin by the barb and ruined his night.
