Any food store will have hearts, livers and gizzards in their meat cases, often frozen in small plastic containers.

This. Made up a few severql yrs ago and worked well.

I've done this with some success and it is far better than simply hooking a piece of liver directly on the hook because they come off very easily.
Another thing I tried was beef melt since it is such a bloody, and tough piece of meat for bait, but in all honesty, it didn't work as well as the chicken livers.
Most of the cats I've caught the past year have been on the old tried and true earth worms. I have a compost pile I keep for my garden and it is lousy with large earthworms, so access to them is very easy.
I've also seen people catch cats of cut pogie (menhaden) since it is a pretty oily fish that attracts them.

Honestly I’ve tried all that stuff and pieces of hotdog have done just as well side-by-side as any other bait (for channel cats). And they’re much easier to fool with than a bunch of bloody meat.

Also is this a good time of year to run lines or does hat even matter for cats?
Spring before it gets really hot is prime time, but you can catch year round. Fall and summer can be good but will be hit or miss. The different species spawn at various times in late spring and will disappear while holed up. Cats will bite best on a slow rising river level.

If we're being honest anything will work. I caught many big blues and channels off the MS river bank using cheap bacon ends. Stays on the hook and puts grease in the water. I know a guy that swears by only zote soap, but he doesnt catch any more than we do.
Hotdog is fine but if you're making a trip out of it you're gonna want something durable to put numbers in the box without having to constantly check and rebait. Can make a big difference in the pain-in-the-arse factor when you're running 50+ noodles. Microwaving hotdog will make it tougher but at that point you're adding steps.

I have had really good success with going to walmart and getting some of the $0.99 packs of great value hotdogs, a jar of worcestershire sauce, and a jar of minced garlic. Cut up the hot dogs and put all that in a ziplock bag and let it sit for a few days in the fridge. It is a bit easier to use than some of the other stink bait type stuff people use.

You mfers are gonna straight up make me get out my boat in the dead of damn winter.

In my experience, now through March is the best catfish jugging time.
Most of my best nights have been mild late winter nights with temps in 50's.

I'm not mad enough at a channel cat to run lines in this shite.
Our best trips are always in april and may, about when everything starts to green up, but I'll be the first to admit it's probably because it's an excuse to camp on the river for us and we go when it's nice out.

Bait, best is a piece of eel about 3/4" square or chicken gizzards or hearts, livers get off the hook to easily. Or a small perch about 3"-4" long hooked though the lips for flatheads.
Hooks, 4/0-6/0 circle offset circle sea hook, gets them in the corner of their mouth and the dont get off. I use 2 per line. I use these hooks
Weights, I catch every plastic cup at the Mardi Gras parades that I can. I cut a piece of hard copper wire about 6" long and make a loop mix a bag a 40lb bag of concrete and fill them up. I think I made right at 30 weights with a 60lb bag.
Floats, I use crab trap floats, people are less likely to mess with a crab trap ball than a jug, my presumption anyway. Buy them from the marine supply for $1.25 each.
Heres a nice one we caught this past fall.

How do you get ivory soap to stay on hook without breaking up.

I do a lot of jug fishing. We cut up a bunch of pool noodles and use them instead of jugs. Much easier to store and reuse. Circle hooks are a must.
I bream fish a lot and will take the first 20-25 bream (how many I put out depends on the location I am fishing) I catch that aren't keepers (size doesn't matter, I have put keeper size bream on there and still caught fish) I put on the noodles and toss them out all around the boat. If a fish gets on one just go over there pick it up and re-bait it. We catch tons of blue cat like that and a few Op's depending on location and time of year.
Also set out 5-6 bushlines a night on fishing trips with live bream. Always get bluecat on those.

We absolutely crushed the cats in Dularge one year on cut mullet that we were catching in the cast net. Filled up a 120qt and a 50qt ice chest in one trip.

Pawpaw used onions to bait his line, Grandma would be piss when we took them from the kitchen.

Ol boy I work with from Monroe says he puts Oragel on the hook so it numbs when they bite. They won’t try to get off as much. Sounds like some yankee arse shite though
Sounds like he's fricking with you to me. Wants to see if you will bite.....pun intended.
Go back to work and tell him you tried it. Then tell him you must have used too much Orajel because when you ran your lines you found dozens of catfish floating on top of the water like they were anesthetized. Just had to scoop them up with a dip net.

This is very much news to me. I've used them before they sell them at bait shops. They never seem to work as good as bream though.
