Don't feel bad I didn't know how to clean either until 6 years ago and I cleaned my first pig on my own without supervision.
Pretty simple just remove the large muscles just as if they were a humans.

That is the one and only Mrs. BP. She is using her Christmas present (a new hog cleaning knife) to get the work done.
She also likes to fish with worms and baits her own hooks, cooks every damn critter we bring home, is as sweet as homemade strawberry wine, and knows just how to keep me happy.
