I believe the question was fish that you have caught. I didn't know their were so many Hawaiian fisherman around here. you don't catch mahi mahi in louisiana its a dolphin fish

Tough to rank,

1) halibut
2) silver salmon, I will never eat store bought salmon again
3) sac a lait
4) wahoo
5) river catfish preferably small
6) small alligator tail..

Fresh large barracuda I caught in Mexico. Took it directly to the restaurant on the beach - it was the best fish meal I have ever had.

One of the coolest things I've seen is my friend catching a greenling only to have a ling cod follow it and then grabbing the greenling. I netted them both and threw the greenling back.

Something not mentioned in here yet, but I try to catch a few of when I'm night fishing offshore is squid.

I know it's not a fish, so it doesn't fit exactly what OP was asking, but damn, fresh squid is some of the best tasting stuff you can get out of the ocean.
