Spent a few days there last year; I was amazed at how chaotic the boat launch was. Parking on the median a mile down the main road.

Maybe try flounder gigging on the bay side. Needs to be lighter winds.

Launch your boat at the motel on the bayside. Where the locals go.
And yes wade fishing is on fire now til June at the golf course. Trout up to 6pounds. Go in the morning and afternoon. Look for bait and trout slicks. Throw topwater Shedog and hold on

Right now I would suggest going to the inside on the west side and hit the surf behind the Cca reefs with live shrimp

Pompano are going off right now caught 12 legal ones last weekend. That was at Fort Morgan.

Stayed at holiday isle 2009. Fished in surf at night. Caught sharks and specs. Caught a 6lb spec middle of the day on dead shrimp. Much better surf fishing than destin/gulf shores area.

Storm, north wind. Although the water is hardly ever gonna look like orange beach. It will get fairly clear on the beach.

Question: several have mentioned fishing behind the golf club. Looking at the map I'm assuming you mean on the gulf side. My question is how do you access that long stretch of beach between the course and the gulf?

I think you can pay a small fee to access the beach through the club.
