She's the only one to report to. There is no HR. She is the owner of the business and the only other employee. Now I worry that once I turn in the key, she is never going to pay me.

Go talk to whoever you report to or whatever.. first thing Monday morning. Be cool about it, but tell them "look, I haven't been paid since June 23. I can not get answers and I need to be paid so I am not leaving until I can find out exactly when I will get paid. Give me my money so we can just be done with each other"

But the lawyer sent a letter stating I have to. What would happen to me if I didn't? I have a feeling she is going to be waiting outside of the door after I complete my last session even though it doesn't end until 6:00 and the letter said to leave it on the desk.

The key is worthless, give it to her , if you don't she will just have the locks changed and deduct the cost from what she owes you, the key does you no good, if you attempt to use it after being told not to you are at risk of being charged with trespassing, remain g after forbidden, breaking and entering, etc
ETA: if it is that important to you just make a copy of the key, but will still be subject to above and if there is an alarm I am sure she would change the code

You need some type of leverage. Sounds like getting a lawyer is the only move here.

I've read up about receiving certified mail. It said keep all correspondence from your adversary. If you do end up in small claims court, you can use the return receipt to counter any claim that your opponent didn't receive the demand letter. The fact that she got a lawyer involved tells me she preparing for a suit on my part due to her negligence.

Louisiana Workforce Commission is the appropriate government entity in Louisiana. Department of Labor doesn't exist...it became La. Workforce Commission several years ago.
After Katrina, there was an verbal agreement that the AG's office would handle, but that is expired and no longer the case. Just mentioning that because some literature (and some lazy workforce commission employees) may try to direct you to the AG, but that is wrong and outdated info.

What's funny about that comment is that he is telling someone who works for himself to get a "real job". He is pretty much saying "I am not a risk taker and rather stay in my comfort zone than to take a chance to be successful".

I once had a similar situation happen to me.
I finally went to the insurance company that was paying the contractor I was working for and told them i wasn't being paid for the work I did on their on their policyholder's behalf.
After I did that the SHTF, and I got my money immediately. I don't know if you could do something like that, but when I did it, it got immediately resolved

The owner finally responded. She stated that she would cut a check for the 3 out of pocket sessions but added "all of the insurance claims will be paid in one big check after your finall day so that we don't miss anything". So in other words, it could take up to 3 months for me to get paid for work done in June.

Sounds like she's spending the reimbursement money and having trouble coming back up with it to pay you.

You are getting pushed around and not doing anything about it so you will always be pushed around. If someone owes you money and you don't sue the shite out of them instantly you will always end up with people owing you money. Even if it costs you a good amount of money it's a principle thing and you need to frick them as hard as you can with legal fees so nobody pulls this shite again in the future.

Can you not report a business to business issue?
Of course you can...it's called filing a lawsuit. How do you not know this?

Does your old boss have a skill set that's hard to find? Seems odd to me you were working for someone else that was making 30%, I'd go out on my own and have someone work for you for the 30% or less even. I'm just saying generally the employer gets the bigger cut.
Sounds to me like it's time to lawyer up and move on. Start your own business and take all her business, you were the one doing the work and delivering the results it sounds like.
