Your MIL subtly called him out for being a POS dog owner and neighbor, and he was reacting to that and probably a lot more you didn't mention, and perhaps don't even know about.

Escalate the situation. shite on his lawn while giving him the bird. Lock eyes with him or the dog as you do this.

Younger me would have whooped his arse , older me call the cops. I've got a son though that trained MMA for several years and has one a couple tourments in Ju Jitsu(blue belt) 2nd degree black belt (tai kwon doe) and is an easy going young man but if someone yelled at his grandmother... I think shite would get real for that neighbor real fast

Maybe... depends on if you're gonna call the cops after your party broke the law, and i hurt your feels. But if we're lucky the cop i actually drew down on, including laser beam on his face, will show up. He knows entering my yard at 3 am, shining a flashlight "looking for a cow that just ran across the road" was a very poor idea.
I have around 1.5 miles of fencing and same length of barbed wire around my couple dozen+ acres, to go with multiple no trespassing signs. shite ain't there for decoration.
