Acadians/Cajuns are descendants of the exiled French people who the British ran out of Nova Scotia and areas near there. Prior to that, their ancestors were in France.

Creoles are people with European decent that lived in New Orleans. Could be Spanish and French or African and French or African and Spanish.

Creole: descendants of the original French settlers who settled New Orleans (although some came from Haiti after the Slave Revolt drove most of the whites out). They often intermarried with slaves and their descendants migrated all over the state including many to Southwest LA where they became cattlemen. Mostly Catholic. Music: zydeco, Jazz, blues, brass bands
Cajuns: After the French and Indian War, the French settlers of Nova Scotia were exiled by the English and many migrated to South Central LA. The ranchers became cattlemen and farmers while the trappers and fishermen settled in the swamps. Mostly Catholic. Music: cajun
Rednecks: the poor and middle class descendants of primarily Scotch-Irish immigrants from the English colonies. They primarily settled in North LA and the Florida Parishes. They mainly lived by logging and farming. Mostly Protestant. Music: country
Carpetbaggers: Wealthy WASPs who came to LA after the Civil War and bought many plantations ruined by the War. Mostly Protestant. Music: classical, ragtime
Coonass: rural south Louisianians that are a combination of any of the above cultures plus German, Islano (Canary Islanders brought by the Spanish), and Italian immigrants that intermarried with Cajuns, Creoles, and rednecks. They live in rural south LA areas. The further south and closer to the river, the greater the German influence (hence the name German Coast), closer to the Sabine there's more Texas influence, closer to the Florida Parishes there's more redneck influence, ect. They are basically just a catch-all category for the state's many ethnic mutts. Mostly Catholic. Music: Swamp pop
ETA: there's also a huge Lebanese community in Lafayette that came to Louisiana after World War I due to the shared French language and Catholicism.
