Mine is people who make loud noises with their mouths in public bathrooms. They spit, clear their throats, and just generally linger and make a ruckus.
I fall into this demographic myself, but it seems like middle-aged, clean-shaven WASPs with engineering jobs are the worst offenders. Really makes me want to beat their asses, but I'd have to wipe and pull my pants up.

Drives me nuts when I get in there and the guy is making all those noises.

The biggest trigger for me is when, on a 2 lane interstate (which unfortunately is all too common in La), one semi, speed governed at 67 MPH decides that it is absolutely crucial to pass another semi that is speed governed at 65 MPH.

People who switch to the other lane right after a turn because they think I'm going to hold them up. They quickly learn otherwise.
